Beef Tips and Ale Stew

  • 1 tsp. vegetable oil
  • Salt
  • Pepper
  • 1/2 cup pre-chopped onions
  • 1/2 cup pre-diced carrots
  • 1/2 cup pre-diced celery
  • 1/2 cup of ale
  • 1/2 tsp. flour
  • 1 cup canned beef stock
  • 1 dash thyme
  • 1 bay leaf

Heat vegetable oil in a large saucepan. Season the beef with salt and pepper and brown on all sides in batches. Remove and set aside.

Add the onion, carrot and celery to the pot and sauté until soft. Add the ale and reduce by three quarters. Stir flour into the ale.

Return the beef to the pan with the vegetables, ale and flour. Cover and simmer until the beef is tender and sauce has thickened (around 60 minutes.)
